The grapes come from our vineyards of Beaujolais-Villages (gamay noir à jus blanc). After a quick cold maceration (18-48 hours), we rack the “saignée” (bleeding) into another tank to be cold settled for 24 hours. This technique makes the juice clean and enhances the quality of the aromatics. The wine is then treated as if it was a white wine and fermented cold at 16°C. No malo-lactic allowed. Estate bottled each spring. Tasting notes : This rosé has a pale crystal pink colour. The nose has the scent of apple blossoms and pink grapefruit. The palate is an explosion of flavours; strawberries, cranberries and apricots. This wine is fresh and mouth-watering, guaranteed to restore la vie en rosé ! Food Pairing : This wine makes a delicious aperitif and also pairs elegantly with a wide variety of foods. Here one might imagine salmon, a bowl of bouillabaisse or a generous portion of ratatouille. Garlic and oil based sauces, trout, sardines, lentils, niçoise salad, roasted red peppers, and creamy blue cheese. Serving temperature : 9°-12°C (48°-54°F) Aging potential : Drink now. |
